I curious as to what these codings mean and which one would be the correct one to use? I highlight them in bold black.

The diagnostics coding is to select whether the front speakers (on a non-Bose system) are monitored for open- and/or short- circuit.

Adaptation channel 2 is use to set the basic number of pulses from the ABS system per wheel rotation, and is used along with the wheel size information in Channel 1 to calibrate road speed and distance.

Adaptation channel 5 (not 2 as in your posting) is used to enable TV - you only have the choice of disabled (0) or enabled when not moving (1).

In Channel 7 the value 8 allows you to change the date format between DD:MM:YYYY and MM:DD:YYYY (the MM:TT:JJJJ is German - Month, Tag, Jar); and the value 16 allows you to select whether voice NAV commands are issued once only (a few hundred yards from a turn or junction) or repeated again when you get closer.

Channel 8 sets the "strength" of the GALA characteristic (how much volume increase there is with road speed). If you have Bose AudioPilot you must use 255.
